Fly Gap 2015 Tannat
The 2015 Tannat was hand picked from Reddy Vineyards in Brownfield Texas on September 24, 2015. Exceptional quality with a great ph at 3.6. We destemmed only and foot treaded in our concrete lagar for close to 3 hours to get a good initial extraction of flavors and color to start off the fermentation precoess. We also weighed down the cap with a heavy duty stainless steel screen. We removed the screed every 48 hours and stirred to release CO2. This method allows us to get a maximum extraction of color from the grape skins. It is always wet, so we didnt have to perform punch downs 3 times daily.
Nose: Deep Bouquet of Dark Wild Cherries, Sun baked tomato leaf, barn wood, tobacco, and cracked leather.
Flavors: integrated flavors of ripe cherries and beef stone with bold tannins.
